KINDness Safari Coming to the Detroit Zoo May 16, 2015 #KindAwesome

I am receiving zoo admission for my family in exchange for this post.

Three rockin’ companies I love have partnered to bring an awesome activity to us: KIND, Zulily and the Detroit Zoo.

Local families can visit the Detroit Zoo in Royal Oak on Saturday, May 16 from 11 a.m. to 4 p.m. for a kindness safari, presented by KIND and Zulily. The kindness safari includes a scavenger hunt booklet, which features interactive kindness activities inspired by animals {i.e. see a bear; give somebody in your family a bear hug!}. How cute is this?!

In addition, attendees will receive flowers upon leaving to pass on to someone else as well as a take-home kindness kit that comes in a complimentary lunch tote that kids can color on {pictured above}.

Recipe: Simple Chicken and Veggie Stir-Fry

I’m not big on resolutions, but I do like to make goals throughout the year. One of my current ones is to eat more veggies. Don’t get me wrong, I actually love veggies. It’s the act of slicing and dicing and eating them before they go bad that I hate. Enter this simple veggie stir-fry.

I love greasy Chinese food. I crave it at least once a month, but we don’t get it often. For one, my hubby doesn’t like it {don’t get me started!} and two – we all know the Americanized version of Chinese food isn’t the healthiest.

I’ve decided I’m just going to start making it and making the whole family eat it! So, with the help of AllRecipes, I found several great stir-fry recipes. Unfortunately, none of them had what I was seeking {minimal ingredients and using frozen veggies}, so I came up with my own recipe. It was a big hit with the hubby AND the toddler!

 Stirfry Ingredients


1 can of chicken broth

3 tbsp of cornstarch

2 tbsp of low-sodium soy sauce

1 tsp of ground ginger

2 tsp of minced garlic {refrigerated kind for ease-of-use. Honestly, if you love garlic, add another teaspoon!}

1-16 oz. package of stir-fry frozen vegetables {or 5 cups of fresh veggies}

4 cups of brown rice OR 3/4 of a box of thin spaghetti {we use whole grain}

Mix together soy sauce, cornstarch and broth in a bowl. Set aside.

Start boiling water for rice and/or noodles. Cook them as directed on the package.

Drop a little olive oil in a skillet {or Wok} and heat for a minute. Add chicken and cook until browned/cooked through. Remove chicken from pan.

In that same pan, add a tad more olive oil if needed and cook veggies until tender, sprinkling the ginger and garlic on top as it cooks. Once veggies are tender, add in the sauce {stirring first}. Cook until mixture starts to bubble up and thicken {about 5 minutes or so}. Add the chicken back in and cook until heated through.

Serve over your cooked rice and/or noodles.

Dinner is served! Tastes even better the second day as leftovers :)
