The holiday season is officially here!!! Woo-hoo! To me, this means lots of entertaining, dinner parties and get togethers with family and friends.
One of my favorite recipes when I’m cooking for a small group is chicken divan. This is my mom’s recipe from years ago and let me tell you – it’s divine! It’s perfect for entertaining during the cold weather, since it’s a casserole. It’s made even better with the addition of a side salad with vinaigrette and dried cherries {or cranberries} and some fresh hard rolls. Yum!
Chicken Divan
- 2 quart casserole dish
- 1 pkg. 12 oz. frozen broccoli, prepared
- 4 chicken breasts, cooked {I generally just boil it while I’m prepping everything}, cubed
- 1 can cream of healthy request mushroom soup
- 1 can cream of healthy request chicken soup
- 1 cup olive oil mayo
- ½ cup plain Greek Yogurt {or sour cream}
- 1 teaspoon lemon juice
- ½ teaspoon curry powder
- 8 oz. package of 2% cheddar cheese
- ½ cup of bread crumbs {or panko}
DIRECTIONS
- Put 2 t. butter in bottom of dish, melt for approximately 25 seconds in microwave.
- Layer broccoli, then add chicken on top of that.
- Mix sauce together {I do this while the chicken and broccoli is cooking}, spread on top of broccoli and chicken.
- Place breads crumbs and cheese on top of that.
- Bake covered in foil {poked with fork holes} at 350 degrees for approx. 45 minutes.
Mix all together and serve and enjoy! Feeds 4-6 and makes for amazing leftovers.

This is one of my favorites too…although my recipe is slightly different. I about 6-7 chicken breasts (raw) layered in a 9 x 13 pan. Cover with broccoli. My sauce is the cream of mushroom soup, 1 cup mayo and 1 1/2 tsp lemon juice and 1/2 cup cheddar cheese. Bake at 325 for 45 minutes, sprinkle french fried onion rings on top and bake 10 minutes more. So yummy & a great comfort food.

Sounds good! Love that you bake the chicken raw – I’m generally too scared to (our oven always needs tons of time) – but maybe I should buck up and try it!

I do, but as Kelley mentions above, it’s definitely possible to throw it in raw – I’ve just always been to scared to do that!

Yum! I wonder if I could sub out the mayo for maybe another can of soup. Charlie is not a fan of mayo & he can pick up on it in anything.

This is really yummy…I make it all the time. The only thing I do different is omit the sour cream and add a box of Uncle Bens Wild rice as the bottom layer. The whole family loves this!
