So my relatives are coming for dinner tomorrow night and I have to make something…What to do?
As I mentioned in yesterday’s post, I’m prepping for a large shopping trip. Therefore, our cupboards are mostly bare. Well, OK, they are somewhat full, but not with many items I can actually make a meal out of.
A few things we always seem to have around: cheese, chicken, salsa and tortillas. And I just so happen to have a can of pinto beans and cream cheese, too. (Because when I like a meal, I buy multiples so I can make it a few times.) BINGO! Winner, winner, cheesy chicken tortilla dinner. Mouth watering yet?
Here’s the recipe:
INGREDIENTS
2 cups cooked chicken, shredded/diced
1 can of pinto beans, drained and rinsed
1 cup of your favorite salsa
8 oz. low-fat or fat free cream cheese (I only had original – and oy! extra calories galore)
8 oz. of your favorite cheese – cheddar or a Mexican blend
Approx. 5-6 tortilla shells (all I had was burrito size, but the smaller ones work too!)
DIRECTIONS
1. Preheat the oven to 350 degrees F and grease a 9×13 inch baking dish.
2. In a saucepan, combine the cream cheese and salsa. Cook until well blended. Stir in chicken and pinto beans.
3. Fill tortillas with the mixture, roll and place into the prepared baking dish. Spread cheese over the top. Cover with aluminum foil.4. Bake for 25 minutes or until heated through.
5. Garnish with your favorite toppings such as lettuce, tomatoes, sour cream, guacamole or my hubby’s favorite condiments — ranch and Frank’s Red Hot. They taste great plain too!
* For extra deliciousness, try throwing in some green chilis for more flavor, or topping with enchilada sauce. *

I would love, love, love this, but hubby: not so much. He’s stuck on traditional American foods.
Sounds like you would have it made, though, if you had unexpected company for dinner!
