Today I am sharing a 20 minute healthy meal idea: Chicken and Bok Choy Stir-Fry. Specifically using humane, happy chicken!
What does that mean, you ask?
If you don’t know, NatureRaised Farms works with independent farmers to raise healthy little chickens. In fact, their diets are 100% vegetarian, and they never use antibiotics, hormones, or steroids or genetic modifications. They are free range, Grade A chicks — meaning super tasty quality.
In some worlds, chicken is chicken. To me though, having a quality chicken in stir-fry is crucial, so I was pretty pumped to use NatureRaised Farms chicken in one of my favorite recipes.
I love this recipe because it’s super simple, is relatively low-cal and SO flavorful and delish. Also? I never knew what the heck to do with bok choy, but knew it’s one leafy veggie I should be eating more of. Plus, it gets mega bonus points since it’s grown in Michigan.
The whole barbecue sauce may throw you off. Personally, I love the flavor combo. Makes it feel more American too if you have a non-global cuisine palate like my hubby 😉

INGREDIENTS
- 1 or 2 cups long-grain brown rice {I like to make a little more than I need, so usually go with 2}
- 1 tablespoon olive oil
- 2 large NatureRaised Farms chicken breasts, cut into 1-inch pieces
- Salt and pepper
- 1 bunch of bok choy, chopped {just chop off the ends and continue chopping like lettuce}
- ¼ cup low-sodium soy sauce
- ¼ cup of your favorite barbecue sauce
- 1 teaspoon of ground ginger {fresh is great too if you have it}
- Optional: Scallions and/or water chestnuts if you like them!
DIRECTIONS
Heat the oil in a large skillet over medium-high heat. Season the cubed chicken with salt and pepper.
You can just tell how quality it is! And this was after being frozen for a week.
Cook the chicken, tossing occasionally, until browned and cooked through, 4 to 6 minutes. Transfer to a plate.
Add the bok choy and ¼ cup water to the skillet. Cover and cook until the bok choy is just tender, 3 to 4 minutes. Try not to overcook it…That will make the good nutrients go buh-bye.
Cook the rice according to the package. For me, that means using a microwave because lord knows a child will interrupt me and I will burn it.
Speak of the little devil cutie. She’s ready to taste test!
In a small bowl, combine the soy sauce, barbecue sauce, ginger, and whatever else your hungry heart desires.
Add sauce to the skillet and bring to a boil.
Return the chicken to the skillet and cook, tossing, just until heated through, 1 to 2 minutes.
Serve with the rice.
P.S. This recipe feeds two hungry adults and two kids who only eat a few spoonfuls. If you have grown kids, I would double the recipe!
