With three little ones, I’ll admit it: I don’t cook a full-blown breakfast as often as I’d like these days. Not that we go out, either. Between needy kids and a loves-to-nurse in the morning babe, I’m just usually scrambling in the morning and throwing whatever is in the fridge together. I need recipes that are EASY since I usually am holding the baby and attempting to keep the toddler out of the pantry and fridge.
With school in the afternoon for Kinley and general toddler pickyness, I need them to eat a FILLING breakfast because the rest of our day is generally a crapshoot of what they will actually eat.
This smoked turkey sausage, egg and cheese bake is one of my absolute favorite recipes to throw together for both breakfast and brinner {breakfast for dinner}. It is a HUGE hit in our house. Since it seems pretty rare these days that we all like the same things, I make this one often, especially when smoked sausage goes on sale and I have beautiful farm fresh eggs from my friend who raises chickens.
Aren’t farm fresh eggs just the prettiest? I love how they come out in all different colors and sizes!
I love the addition of sour cream in this recipe because it gives the eggs a delicious richness and makes them extra fluffy. Happy eating!
SMOKED SAUSAGE, EGG AND CHEESE BAKE
INGREDIENTS
- Package of smoked turkey sausage {comes in a 2-pack}, sliced and diced
- 1/4 cup onion, diced
- 8 eggs
- 1 cup of milk
- 1/4 cup of sour cream {or plain Greek yogurt}
- 1 teaspoon ground mustard
- salt and pepper to taste
- 1 1/2 cups shredded cheddar or Colby Jack cheese, divided
DIRECTIONS
- Preheat oven to 400 degrees.
- Cook the sausage and onion in a skillet until the sausage has browned. Drain grease and place meat into a sprayed casserole dish.
- Whisk together the eggs, milk, sour cream, salt, pepper and ground mustard.
- Sprinkle the sausage with 1 cup of the cheese, and then pour the egg mixture on top.
- Bake until the center is cooked — about 25-30 minutes. Sprinkle with the remaining cheese, and return to the oven until the cheese has melted. Cut into wedges or scramble to serve. If there is excess grease or liquid, drain before slicing to serve.
These portions serves 6, but feeds our family of 4 eaters perfectly {and we usually all get seconds}. It reheats beautifully for breakfast the next day if you have leftovers, too. Serve with toast, fresh fruit and milk or orange juice for the perfect meal! My husband and I also like to add a dash of Frank’s Red Hot to the eggs for a little kick.

Also, have you tried freezing it to heat up later? I wonder if that would be good.
I still haven’t experimented with eggs in the crock pot, but something tells me it wouldn’t turn out quite right! But I do think it would freeze OK!
Ooohh I’ve never tried mixing sour cream in with the eggs. I feel a brinner coming on soon (I don’t cook breakfast much either lol)
The sour cream just enhances the eggs and helps make them fluffy and filling! It works really well surprisingly 🙂

The ground mustard just adds a little flavor. It’s barely noticeable 🙂
