There is one thing we can always agree on meal-wise in our house: Pizza. But, when it comes to pizza, we can NEVER agree on toppings. My kids are picky. My husband is a meat eater – the more meat the better. And I am the diva. Figs? Yes. Feta? Heck to the yes. A sunny-side up egg? Mmmm. The crazier, the better.
For the hubby and I, our middle ground is buffalo chicken pizza, mostly because it’s delicious and can easily be made in the crock pot while I tend to children. And making our pizza on individual flatbreads makes customizing one for the kids a cinch.
Let me tell you, this little beauty is pure magic at the end of a hard day filled with stage 5 clingers.
For starters, I don’t make my own flatbread — I buy it. Because this stuff is SO good! It’s in the deli section, and sometimes on sale 2/$6. Get the garlic. You won’t regret it.
And Frank’s…Oh how I love thee. Just make sure you get the one that says BUFFALO for this recipe.
I love making buffalo chicken in the crock pot. Why? Because using a stove with children who are obsessed with “helping” me cook means danger. I love this method too because I don’t have to remember to defrost chicken either. {#lazycook} Just plop it in the crock, pour in buffalo sauce and 1/2 of a ranch packet and boom. Yumminess that can be put on anything in 4 hours. Isn’t it purty, too?
From there, I dress up the flatbread with delicious toppings, including LOTS of cheese. Starring roles include blue cheese and the classic act — mozzarella. Ahhh, heaven. I usually sneak a few pieces during this part.
After loading on toppings and baking, this beauty comes out. I promptly add some blue cheese dressing because it’s the nectar of the Gods and why wouldn’t I?
Pop in the kids boring cheese and pepperoni pizza next to it and add a salad, and you have a meal fit for everyone. Or, serve this as an app for a football game or a party. Oh nom nom.

Mmm, yum. I’m not a huge fan of buffalo chicken (too spicy for me, unfortunately) but I bet it’s delish with that garlic naan. I like your usual – mushrooms, pepperoni, etc – but also a big fan of pesto on flatbreads.

Lauren, this looks fantastic. Yum yum. I love that the bread is pre-made and chicken in the crock pot is much tastier than cooked on the stove or in the oven anyway.
