Nicer weather = time to get grilling!
I’ve been watching what I eat a bit closer after taking some time off, but there is one thing I can never seem to nix entirely: Ranch.
But instead of slathering it on my pizza and French fries {sad trombone for being done with that phase in my life}, I’ve found another way to incorporate it without going too crazy: Using it for a marinade. I love the Boathouse Farms yogurt-based dressings for a healthier option {found in the produce area at Meijer} since they have half the calories.
This simple marinade makes the chicken SO amazing. When grilled to perfection, it pretty much falls apart in your mouth.
In this recipe I used pantry staples versus fresh herbs, but as most of you may know fresh is even more amazing! I just wanted to make it a little more realistic for those of us who can’t be running to the store daily 😉

I love to eat it up with a side salad and roasted veggies, but it also tastes great in wraps or in a salad. Double the recipe and use it all week for lunches!
Another important item to note: I have found my kids eat MUCH more of their dinner when we eat outside. Suffice to say, we love dining on our deck as much as possible, and this recipe gets a big thumbs up from all 3 of my little monkeys, especially this crazy guy:
