Taco Tuesday {or Wednesday or Thursday} is a staple here for dinner. We love that tacos can easily be customized to accommodate all of our taste buds’ desires {give me all the olives and tomatoes, while the kids are guaranteed to skip both of those}.
We are at the point that we are a two pounds of fresh ground beef kinda family when it comes to taco night. One pound is not quite enough and two pounds is a bit too much, so we love re-purposing our leftover meat in other ways.
One simple way is making quick taco wraps after dinner is cleaned up and the meat has cooled.
My kids aren’t big on lunch meat, so I love that these taco tortillas include beef, which has protein, iron, zinc, choline, and B-vitamins — all critical nutrients for keeping active kiddos full and energized.
These are also great for the days we have a major time crunch between school and sports or need something on the road. I can roll them in some plastic wrap and pop them in a cooler and they can eat them easily {and virtually} mess-free in the car.
Next time you have some leftover ground beef taco meat, try these wraps with ingredients you likely already have at home!
Taco Tortillas
Makes 7 wraps
Ingredients
- Tortilla shells
- 1 cup of ground beef taco meat
- 5 oz. whipped cream cheese
- 1/2 cup of shredded cheese
- 1/4 cup of salsa
- 2 tablespoons of mayo
- Shredded lettuce {optional}
Directions
Mix together all ingredients in a bowl. Spread across tortilla, add lettuce if you’d like, and roll up. Wrap tightly in plastic wrap or Press and Seal and refrigerate for at least one hour.
Unwrap while packing lunches, cut as desired and place in lunch box with an ice pack.
