In our house, we love sandwiches…any kind. My husband goes through ’em like no tomorrow.
In my quest to be healthier, there’s one condiment I LOVE but have been limiting myself with: mayo.
Well, did you know you can use avocado as a replacement? Sounds odd, I know…But it’s delicious. I’ve mixed it with tuna and canned chicken to replace mayo/dressing, and it has been amazing.
Here’s one of my favorite sandwiches ever…
– 2 slices of whole wheat bread…or a Flatout Italian Light wrap (one of my favorite Michigan made products!)
– 4-5 cherry tomatoes, sliced and diced
– 1 avocado
– 1 can all white meat chicken (small can)
– 1 tablespoon fat free cheddar cheese
Mix all ingredients except for the bread in a bowl then spread on sandwich, wrap or in lettuce. Should make 1-2 sandwiches, depending on how full you pack them.
