You know when you’re a kid and people ask what your favorite food is? Well, mine is pizza – hands down. Always has been, always will be. So when fellow Michigan blogger Being Cheap Easy did a shout for creative pizza ideas for #PizzaFriday, I knew I had to share my recent favorite.
Recent studies show how families need to re-think our pizza addiction. Because of this, I’ve tried to be better about making pizza at home, and with better, less processed ingredients.
Instead of the high calorie traditional pepperoni and cheese pizzas, I’ve been experimenting with adding more veggies and getting creative. I can’t always get my kids to eat it my way, which is why I love Flatout’s Artisan Thin Pizza Crust — I can make my own little pizza to accompany whatever I make for them. {Bonus points: Flatout is based in Saline, Michigan!}
My combo includes blue cheese, pecan pieces and spinach. I love that spinach’s mild flavor is perfect for getting a boost of vitamin A, K and calcium and iron. Woot!
I also love that this pizza is only 399 calories. I eat the entire thing, feel full, and squash my daily salt craving with it. It’s so good it feels indulgent.
Thin Crust Spinach, Blue Cheese and Pecan Pizza | Serves 1
Ingredients
- 1 Flat Out Artisan Pizza Crust
- 1 tablespoon olive oil
- 1 tablespoon grated parmesan cheese {optional, though I like to include it, so it’s counted in the 399 calories}
- 1 tablespoon pecan pieces {you can also use walnut pieces}
- 1/4 cup blue cheese crumbles {Aldi’s has the best price at $1.99/container}
- 2 handfuls of fresh baby spinach
Directions
1. Pre-bake the crust at 375 degrees for 2 minutes.
2. After the crust is warm, coat it with the tablespoon of olive oil.
3. Add layers of the parmesan, pecan pieces and blue cheese. Add some ground black pepper if you’d like.
4. Place as much spinach as you’d like on top {I use two handfuls}.
5. Bake pizza in the oven at 375 degrees for 4 minutes or until the blue cheese has melted.
Slice it up and pizza is served! Perfect for a quick meal or to serve as an appetizer.

Um, that looks amazing, and also you reminded me to go on Flatout’s website … I’ve been hoarding a stash of their flatbread since my Adoba Dearborn event (they were one of the sponsors) and am running out! I like using their flatbread (sometimes I make 2 if I’m super hungry!) and adding Sartori cheese, or Kraft shredded cheese, and either Ragu pizza sauce or Trader Joe pesto.
Recently I made one with bbq sauce, Kraft monterey/colby shredded cheese, and Tyson frozen grilled chicken, and it was actually really good!
PS: I see on their site that VG Foods + Meijer are the only stores that have their flatbreads – where in Meijer was it?! I looked both in the deli / “fancy foods” area and also the pizza station area and could NOT find it. TIA. 🙂
