One of my favorite questions to ask friends is “What would your last meal on earth be?”
I think you can tell a lot about a person from their choice, ya know? Mine would definitely be made by someone else because there is no way I’d be cooking if it was my last day 😉
My answer has been the same for years…A glass of wine, a Maurice salad and a bowl of Canadian cheese soup from Hudson’s {yes, the department store is now called Macy’s…I still call it Hudson’s at times though}. Honestly, it’s my favorite meal ever and I order it every time I visit Macy’s Lakeshore Grill.
I was beyond thrilled when I found an old Hudson’s cook book at my local Salvation Army with recipes for BOTH. Now I can make my favorites at home!
I modified the Canadian cheese soup recipe to my liking, and I am impressed that it tastes pretty close to the original recipe. I couldn’t believe how easy it was to make, and it truly makes the BEST leftovers.
I also love how you can easily customize this by adding chicken, bacon, broccoli, or whatever your heart desires.
Paired with some crusty bread and a salad, this indulgent soup is perfect for hitting the spot on a cool evening.
