I put my hand up on your hip, when I dip, you dip, we dip.
That song is definitely an anthem from my adolescence and awkward pre-teen dancing, but now it just gives me the munchies. Because is there anything better in summer than sitting lakeside or poolside with an amazing DIP? I think not!
My neighbor makes the most amazing dip ever…It’s delicious, addictive, and relatively healthy. There are tons of variations out there of this dip, but this one — with feta — is my absolute favorite! She gave me permission to share with the world because it’s that good.
I can’t wait to make this for an upcoming girl’s night. I like that I can easily grab all of the ingredients at Aldi and it’s super afforable to make.
Also? There isn’t spice to it, so it’s easily enjoyed by a variety of taste buds.
Make it and I promise it will be hard not to eat the entire batch 😉
Summer Salsa with Feta Dip
- 1 can of corn, drained
- 1 can of black beans, drained
- 1/3 cup apple cider vinegar
- 1/3 cup of extra virgin olive oil
- 5 oz. feta cheese {block preferred, but pre-packaged works too!}
- 1 bunch of green onions {ends trimmed}
- 1 tablespoon of sugar
Directions
Combine all ingredients in a bowl, cover, and refrigerate. This dip lasts a few days in the fridge, but definitely is tastiest when made just before serving.
